Kagianas



Hi, I’m Georgia and this is my tiny kitchen.

Although it is small, I have been able to make numerous recipes and I will be sharing some of them with you. Some are mine, some are traditional Greek and some I have found around the internet.

Today’s recipe is one of the first I learned to cook. It’s super easy and it’s mostly a summer time food as your main ingredient is very mature tomatoes. It has a plethora of names but in our family we call it “Kagiana” and I think it’s Turkish for omelet and that’s  exactly what that  food is. We are making an omelet with tomato and feta cheese.

Ingredients:

1 kilo of very mature tomatoes
3-4 eggs
200 grams of feta cheese

The quantity of the ingredients mostly depend on how many people are going to eat.

Lets start by peeling the tomatoes and then grate them using a grater like this one, directly into a pan. You can use a food processor if you like but I think it gives the food more flavor if you make it by hand.
Now we have a pan full with something like a tomato massacre and we put it on the stove, medium to full heat and leave it until all  the water evaporates stirring occasionally.

We put the eggs in a bowl and beat them lightly, add some salt and pepper and maybe some paprika, my personal favorite. Break the feta cheese in pieces and put it in the bowl with the eggs.
Pour a bit of oil in the pan, I use olive oil and throw in the egg/cheese mixture. Stir until the egg sets, it only takes a minute or two and take of the fire.

 You can serve it with fried potatoes or with just some green salad. My husband can eat a whole pan just with bread.
